ACHARI BAIGAN ALOO RECIPE




Do you want to enjoy the taste of both pickle and sabji in
one? Then here is the perfect recipe for you – Achari Baigan Aloo. It is a
flavourful delight.

Ingredients:

      
Potato – 3(chopped)

      
Brinjal – 500gms (Chopped)

      
Onion – 2 (finely chopped)

      
Tomato – 3 (finely chopped)

      
Oil – 6 tbsp

      
Salt to taste

      
Mustard seeds – 1 tbsp

      
Fennel seeds – ½ tbsp

      
Cumin seeds – 2 tbsp

      
Nigella seeds – 1 tbsp

      
Fenugreek seeds- ¼ tbsp

      
Black pepper – 5-6

      
Red chilli – 2

      
Bay leaf – 1

      
Cinnamon – 1

      
Cardamom – 2

      
Asafoetida – 1 pinch

      
Ginger-garlic paste – 1 tbsp

      
Turmeric powder – 1 tbsp

      
Red chilli powder – 1 tbsp

      
Coriander powder – 2 tbsp

      
Garam masala powder – 1 tbsp

      
Pickle masala – 4 tbsp

      
Dried fenugreek leaf – 1 tbsp

      
Fresh coriander leaves

 

Method:

      
Take 500gms of chopped brinjal and 3 chopped
potatoes and soak them in water.

      
Heat a pan on low flame, add 1 tbsp mustard
seeds, ½ fennel seeds, 1 tbsp cumin seeds, 1 tbsp nigella seeds, ¼ tbsp
fenugreek seeds, 5-6 black pepper, 2 red chillies and roast them until it is
aromatic.

      
Cool this roasted mixture completely and then
blend it coarsely. The pickle powder is ready.

      
Take a pan, heat 2 tbsp oil and add chopped
brinjal and fry it until it becomes soft and golden. Then take the brinjal out
on a plate.

      
Then, 2 tbsp oil to the pan and fry the chopped
potatoes until golden brown. And then take the potato out on a plate.

      
Now, heat 2tbsp oil and add 1 tbsp cumin seeds,
1 bay leaf, 1 cinnamon, 2 cardamoms, and roast it for a minute. Then, add one
pinch of asafoetida, 2 finely chopped onions, 1 tbsp ginger garlic paste, and
fry it until golden brown.

      
Now add 1 tbsp turmeric powder, 1 tbsp red
chilli powder, 2 tbsp coriander powder, 3 tbsp pickle masala and fry it for 2
minutes on medium heat. Then add 3 finely chopped tomato and fry them until
they get mushy.

      
Once the oil separates from the mixture add the
fried brinjal, fried potato, salt to taste and mix it well.

      
Then add 1 cup of water, mix the mixture and
cover it and cook it for 10 minutes.

      
Now add 1 tbsp dry fenugreek leaf, fresh
coriander and mix it well. Then add 1 tbsp of garam masala, 1 tbsp pickle
masala and mix it well and cover it so the vegetables absorb all the flavours.

      
Achari Baigan Aloo is ready.

Serve this
