BUTTERSCOTCH ICE-CREAM RECIPE

Its summertime so, ice cream is all that one can think of
during these hot days. So, let’s make some yummy butterscotch ice cream and
enjoy it with friends and family.

 

Ingredients:

For Praline:

      
1 Bowl of Sugar (100 gm)

      
1 tbsp of Butter

      
1 tbsp Cashew nuts (Chopped)

For Ice-cream:

      
250 ml Amul Fresh Cream

      
2 pinch yellow food colour (optional)

      
½ bowl of Icing Sugar (100 gm)

      
½ tsp Butterscotch Essence

      
½ glass of Chilled Milk

 

Method:

 

To make the Praline:

 

Take a steel plate and
grease it with some oil and set it aside.

Then take a non-stick
pan and add a bowl of sugar. Keep the flame on low or medium and allow it
caramelize. *Do not add water to the pan.

 

Let the sugar to melt
slowly, keep stirring it so it does not burn. Once the sugar is caramelized,
add 1 tbsp of butter and 1 tbsp of chopped cashew nuts mix it well for a
minute.

 

Then add the hot mixture
onto the greased plate and let it harden and set for 10-15 minutes.

*If the temperature is
hot outside, then you can put the mixture into the fridge and let it set for
around 5- 10 minutes.

 

Once the praline is set
take the pieces of it, put inside a Ziploc and crush with a rolling pin (or you
can use a mixer to crush it).

 

To make the Ice cream:

 

 Take a mixing bowl and add 250ml of Amul Fresh
Cream. And whip the cream with an electric blender at slow speed. (You can use
a hand blender as well but it will more time to whip.)

*Make sure the blender
equipment, bowl and cream are chilled before whipping.

 

After 2 minutes of
blending add ½ bowl of icing sugar, ½ tsp of the Butterscotch essence and 2
pinches of yellow food colouring. (Food colouring is optional). And then whip
it in high speed until stiff peaks.

 

Add ½ cup of chilled
milk and fold the mixture well with help of a spatula. Then add the 2tbsp of
crushed praline to the mixture (you can add more if you want according to your
taste) and mix it well.

The Ice cream mixture is
ready.

 

Now, pour the ice cream
mixture into an airtight container and add some praline on top. Close the lid
of the container and let it chill for about 7-8 hours or overnight in the deep
freezer.

 

After 7-8 hours, the ice
cream is well set and ready.

 

Scoop the ice cream in a
bowl and garnish it with praline. And serve the delicious ice cream with your
friends and family.
