CHUTNEYS FOR CHAAT

-Sweet tamarind chutney, Green
Chutney




Dahi puri, Bhelpuri, Pani puri, Papdi chat……. Every chat has
these 2 chutneys. And here is the recipe to make these chutneys.

 

Ingredients:

For Sweet tamarind chutney:

      
Tamarind- 50 g

      
Jaggery – 100 gm

      
Raisins – 10-15

      
Dates – 10 (chopped)

      
Dry ginger powder – 1 ½ tbsp

      
Melon seeds – 1 tbsp

      
Black salt – 1 tsp  

      
Chaat masala – 1 tsp

      
Cumin powder – 1 tsp

      
Dry mango powder – 1 tsp

      
Red chilli powder- ½ tsp

      
Red food colour – 2 pinches

      
Salt – 1 tsp

 

For Green Chutney:

      
Fresh Coriander leaves – 1 bunch

      
Mint leaves – ½ bunch

      
Green chilli – 4-5

      
Lemon juice – ½ a lemon

      
Aloo bhujiya – 2 tbsp

      
Black salt – 1 tbsp

      
Water – 8 tbsp

      
Curd – 4 tbsp

 

Method:

To make Sweet Tamarind Chutney:

      
Soak 50gm of tamarind in 1 cup of hot water for
10 minutes and mash it. Then, strain the pulp.

      
Take a pan, add tamarind pulp, 1 cup water,
100gm jaggery, and cook until jaggery melts completely.

      
Add 10-15 raisins,10 chopped dates,1 ½ tbsp of
dry ginger powder, 1 tbsp of melon seeds, 1 tsp black salt, 1 tsp chaat masala,
1 tsp cumin powder, 1 tsp dry mango powder, ½ red chilli powder, 2 pinch red
food colour, 1 tsp salt and mix it well. Then cover it and cook for 5 minutes.

      
Sweet tamarind chutney is ready.

 

To make Green Chutney:

      
Take a blender, add 1 bunch of fresh coriander
leaves, ½ bunch mint leaves, 4-5 green chillies, half lemon juice, 2 tbsp aloo
bhujiya, 1 tsp black salt, 4 tbsp water and blend until smooth.

      
Then transfer it to a bowl and add 4 tbsp of
fresh curd, 4 tbsp of water and whisk it well.

      
Green Chutney is ready.

Serve these chutneys with all kind of chaats.
