Gajar Halwa Recipe

Gajar (Carrot) is available in Winter season. Winters itself is a season of festivals and occasions. Lets make Gajar Halwa today for the guests who are about to visit your house to greet you.


Ingredients 

Carrot – 2 kg.
Sugar – 350 gms.
Mawa – 250 gms.
Desi ghee – 4-5 table spoon.
Raisins – 1 table spoon (separate the stems)/8-10
Cashews – 25-30 gms. (cut each into 4-5 pieces)/8-10
Almonds- 8-10 (Chopped)
Cardamom – 5-6 (peel and beat it)/1 tbsp Cardamom Powder
Milk – 300 ml ( 1 Glass)
Method –

Take 2 kg. red carrots, wash and peel them. Grate all the carrots in a separate bowl.
Add 2 tbsp Ghee into a heavy bottom vessel/pan. Put the grated carrots into the pan and cook it until carrot juice dissolved completely.Do not cover the pan.
Roast the mawa in another pan on a medium flame and take it out in a separate bowl.
 After carrots juice get dissolved ,add sugar to it and stir it continuously at shorts intervals. The carrots will start to boil leaving its juice. Stir it after every 5 minutes and cook till the entire water gets burned into the pan. You will see that the carrots have turned tender.
Add 1 Glass of milk into it and cook it until it is completely dissolved.
Add roasted mawa to it and mix them well. Stir it occasionally and cook for 4-5 minute. Then add 1 tbsp cardamom powder into it and mix well.
Add 1 tbsp ghee into another pan and add all dry fruits (Almonds,Cashews and Raisins) into it and fry them for a minute.Turn off the flame. 
Add all the dry fruits alongwith ghee into halwa mixture and add 1-2 tbsp ghee into it .Cook it for another 2-3 minutes on medium flame.
Turn off the flame .Gajar Halwa is ready.
Take it out in a serving dish and garnish it with grated coconut. Serve it hot or cold as per your taste and preference.
